   Ingredients: 

1 ½ cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

   ½ tsp salt

1 ½ tsp pumpkin pie spice

    ½ cup sugar

    ¼ cup brown sugar

1 cup canned pumpkin

2 large eggs

    ½ cup vegetable oil

    ½ cup milk

 

  Instructions:

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In another bowl, mix sugars, pumpkin, eggs, oil, and milk until smooth.
  4. Fold the wet ingredients into the dry until just combined.
  5. Divide batter among muffin cups and bake for 18-22 minutes or until a toothpick comes out clean.

 

    Apple Cinnamon Bread

  Ingredients:

2 cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

  Instructions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, baking powder, baking soda, salt, and sugar.
  3. Cut in the butter until the mixture resembles coarse crumbs.
  4. Stir in sweet potatoes and buttermilk until just combined.
  5. Turn dough onto a floured surface, roll out, and cut into rounds.

  2. For the crust, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan.
  3. Beat cream cheese and sugar until smooth. Add pumpkin, eggs, vanilla, and spice. Mix well.

  2. In a bowl, mix flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. Cream butter and brown sugar. Add egg and molasses.

 Ingredients:

 2 cups all-purpose flour

 1 tsp baking powder

 1 tsp baking soda

 ½ cup sugar

 ½ cup brown sugar

 1 cup pureed butternut squash

 2 large eggs

 ½ cup vegetable oil

 ¼ cup orange juice

 

  Instructions:

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix sugars, butternut squash, eggs, oil, and orange juice.
  4. Combine wet and dry ingredients until just mixed.
  5. Pour into the pan and bake for 50-60 minutes.

 

  Pecan Pumpkin Pie Bars

   Ingredients:

     Crust:  

     1 ½ cups all-purpose flour

      ¼ cup sugar  

      ½ cup butter, softened

     Filling:   

      1 cup canned pumpkin,

       ½ cup sugar,

       ¼ cup brown sugar,

       2 large eggs,

       1 tsp vanilla extract,

       1 tsp pumpkin pie spice

    Topping:   

        1 cup chopped pecans,

        ¼ cup maple syrup

 

  Instructions:

  1. Preheat oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. For the crust, mix flour and sugar, then cut in butter. Press into the bottom of the dish.
  3. Bake crust for 15 minutes.
  4. For the filling, mix pumpkin, sugar, brown sugar, eggs, vanilla, and spice. Pour over baked crust.
  5. Bake for 20 minutes.
  6. For the topping, mix pecans and maple syrup. Spread over the partially baked bars.
  7. Bake for an additional 20 minutes.
